Butterfly Bourbon Sidecar

1 1/2 oz. Basil Hayden’s Bourbon (preferred)
1/2 oz. Butterfly Botanical Liqueur
1/4 oz. Cointreau Liqueur
1/2 oz. Lemon Thyme Lavender Cordial*
2 dashes Luxardo Maraschino Liqueur
Lemon Peel
Sugar (optional)

Build all ingredients in shaker, add ice, and shake.

Strain into a martini or coupe glass.

*Lemon Thyme Lavender Cordial

1 part Fresh Lemon Juice
1 part Cane Sugar Lemon Peel
4 Fresh Thyme Leaves
1 Lavender Bud

Peel only the yellow part from lemons (avoid white pith) lengthwise in long strips. Reserve strips. Cut and juice lemons, and strain pulp from juice.

Pour juice into non-reactive saucepan (appropriate to batch size) with equal parts sugar. Stir mixture until sugar is mostly dissolved, and heat on stovetop over medium-low heat. Slowly heat to ensure clean lemon flavor, use thermometer to monitor and do not boil.

Remove from heat when mixture reaches 175°F and pour into non-reactive container.

Allow mixture (cordial) to cool to room temperature uncovered.

Add lemon peel, thyme, and lavender to cooled cordial and stir to combine.

Cover and refrigerator overnight, or a minimum of two hours.

Stir and finely strain cordial into glass containers for storage and refrigerate until ready to use.
